Nichts geht über Pizza! Und ganz besonders nicht selbstgemachte, glutenfreie mit einem leckeren und erfrischenden Minze Pesto.
Durch die extreme Hitze ist wohl, nicht nur mein eigener Basilikum förmlich explodiert und nun fast 60 cm, sondern auch die Minze bei meinen Eltern. Sie waren ganz aus dem Häuschen als ich nachgefragt habe, um mir welches für dieses Pesto abzumachen. Was mich gleich mal zu dem Belag dieses Rezeptes führt, selbstgemachtes Pesto!
Das liebe ich ja total. Früher habe ich mich immer davor gesträubt, mit der Annahme es würde ja ewig dauern und so viel Zeit und Arbeit in Anspruch nehmen..Mittlerweile habe ich in keinen 5 Minuten die besten Pestos aus meinem Mixer herausgekratzt und freue mich auch immer, wenn ein Gläschen leer ist um Neues zu machen.  Hier habe ich neben frischer Minze auch noch Ingwer, eine Knoblauchzehe (da könnt ihr natürlich variieren, wie es für euch am liebsten ist), Zitrone, Ahornsirup, Cashewkerne, etwas Olivenöl und das Edle Alpensalz Bergkräuter von Bad Reichenhaller verwendet. Genau perfekt für die heißen Tage, da es neben der erfrischende Minze und Zitrone und auch all die leckeren Kräuter innerhalb von einer Prise vereint!
Weiter geht es mit dem Pizzateig. Natürlich, ist das ihr kein typischer Italienischer Pizzateig, dass mal gleich vorweg. Ich persönlich mag es aber total andere und vor allem mir erstmal unbekannte Rezepte auszuprobieren. So auch dieser Teig der mit Kichererbsenmehl hervorragend auskommt. Er wird super schön knusprig und lässt sich auch noch am nächsten Tag sehr gut genießen.
Als Belag habe ich die ersten Tomaten geerntet und noch eine Zucchini in Streifen geschnitten, zum Schluss mag ich immer total wenn frische Kräuter wie hier Basilikum und Thymian aus meinem Balkon drüber zu streuen. Nicht zu vergessen noch etwas Rucola, Sesamkörner, Hefeflocken und noch eine Prise Edlem Alpensalz Bergkräuter!
Was gehört auf euere Pizza drauf? Ist es auch so ähnlich oder seid doch lieber ein klassischer Tomatensoßen Fan. Falls ja, dann könnt ihr das Pesto auf weglassen oder nur vereinzelt Kleckse darauf verteilen. Das schmeckt ebenfalls so lecker!

Nothing beats pizza! And especially not homemade, gluten-free with a tasty and refreshing mint pesto.
 Due to the extreme heat is well, not only my own basil literally exploded and now almost 60 cm, but also the mint at my parents house. They were thrilled when I asked to get some for the pesto. Which leads me to the topping of this recipe, homemade pesto! 
I totally love that. In the past, I used to balk at it, assuming that it would take forever and take up so much time and work. In the meantime, I love to even scratch out the best pestos from my blender in 5 minutes, and I'm always happy if some of my glasses are getting empty and I can do some new. Here I have next to fresh mint and ginger, a clove of garlic (you can of course vary, as it is most like for you), lemon, maple syrup, cashews, a little olive oil and the noble alpine salt mountain herbs used by Bad Reichenhaller. 
Just perfect for the hot days, as it combines the refreshing mint and lemon and all the delicious herbs within a pinch!
It continues with the pizza dough. Of course, this is not a typical Italian pizza dough, that's just the way ahead. Personally, I like it a bit different and especially try first unknown recipes. So also this dough with excellent chickpea flour. It gets really nice crispy and can be enjoyed very well even the next day. 
As a topping I have harvested the first tomatoes and cut one more zucchini into strips, in the end I always like to sprinkle with fresh herbs like here basil and thyme from my balcony. Not to forget some arugula, sesame seeds, yeast flakes and a pinch of fine Alpensalz mountain herbs! 
What's on your pizza? Is it similar or you prefer a classic tomato sauce. If yes, then you can leave out the pesto or just spill a bit on top. It also tastes so delicious!
