Nichts geht über einen Teller voller Nudeln!
Aber was mittlerweile nie fehlen darf ist eine cremige Soße. Könnt ihr euch vorstellen, dass ich als Kind und Teenager Pasta immer blanko gegessen habe? Alle einmal ohne alles. Mittlerweile unvorstellbar, gibt es doch so viele Möglichkeiten.
Von Pesto zu Tomatensoße zu veganer Bolognese und wie bei diesem Rezept mit einer Cashew Spinatsoße.
Cashewkerne sind eines der wenigen Nüsse die bei mir im Vorratsschrank wirklich nicht lange halten. Zum Teil gebe ich immer ein paar Gläser meiner Mutter ab und der andere Teil wird entweder zu Cheesecake oder eben eingeweicht. Solltet ihr keinen hochleistungsmixer haben, dann investiert den Tag davor 2 Minuten darin um die Cashewkerne in Wasser einzuweichen-das hilft euch die perfekte cremige Konsistenz zu erhalten.
Ansonsten müsst ihr dann nur noch die restlichen Zutaten(unter anderem Hefeflocken, Mandelmilch, Gewürze etc.) in euerer Mixer füllen, pürieren und das war's dann auch schon! Super einfach und super cremig!
Als Nudeln könnt ihr jegliche Form und Geschmack nehmen. Das hier sind Penne aus Reismehl und einer meiner Lieblingsglutenfreien Alternativen! Mit etwas frischem Spinat und voila euerm schnellen Mittagessen oder Abendessen steht nichts mehr im Wege!
Die Soße könnt ihr auch prima am Tag vorher zubereiten oder mehrere Tage im Kühlschrank aufbewahren.

Cashew nuts are one of the few nuts that really don't last long in my pantry. Sometimes I give a few glasses to my mother and the other part is either cheesecake or soaked up. If you don't have a high-performance mixer, invest 2 minutes the day before to soak the cashew nuts in water - this will help you to get the perfect creamy consistency.Otherwise you only have to fill the remaining ingredients in your blender, puree and that's it! Super easy and super creamy! 
As noodles you can take any shape and taste. These are Penne made from rice flour and one of my favorite gluten free alternatives! With a little fresh spinach and voila your quick lunch or dinner, nothing stands in the way! 
You can also prepare the sauce the day before or keep it in the fridge for several days.
