Macarons-mon amour!
Ok, nach 4 Jahren Französisch in der Grundschule bekomme ich gar keinen Satz zustande oder kann nur noch ein paar der Zahlen aufsagen. Was ich aber weiß ist diese kleine französische 'Sünde'. Meine Schwester war erst vor ein paar Jahren in Paris und damals kam sie ganz stolz mit sehr (sehr) teueren Macarons wieder heim. 
Diese hier sind aber alles andere als gewöhnlich. Wie die Überschrift schon verrät, sind sie komplett vegan und eben nicht mit Eiweiß aufgeschlagen. Die ersten Versuche habe ich meinem kleinen Bruder zum probieren hingestellt und er war total begeistert. Erst danach habe ich ihm gesagt, dass sie aus Kichererbsenwasser sind. "Waaaaas, das stinkt doch immer so eklig", war seine Reaktion.
Ja diese Macarons sind aus Kichererbsenwasser, viel mehr bekannt als Aquafaba. Die Flüssigkeit wird eingekocht, was wirklich nicht gerade angenehm riecht. Lohnt sich aber voll und ganz, da es danach richtig schön fluffig aufgeschlagen werden kann. 
Nach mehreren Versuchen, kam ich abends auf die Idee das ganze nochmal auszuprobieren. Wer also um halb 9 mit dem Handrührgerät für 20 Minuten in der Küche stand, war ich. Meine Nachbarn müssen mich lieben haha! 
Was ich daraus gelernt habe, ist Zeit ist der Schlüssel für sehr gute Macarons. Das Aufschlagen der Aquafaba, vermischen der Zutaten und dann die Kreise auf ein Backblech aufspritzen ist vielleicht in keinen 30 Minuten gemacht. Was wirklich lange dauert ist die Macarons trocknen zu lassen. Je länger desto besser-bei mir war das beste Ergebnis tatsächlich nach 1,5 bis 2 Stunden. Es ist also keins dieser Rezepte, dass man mal schnell machen kann. Leider, leider nicht. Aber ansonsten würde man es wohl auch viel zu oft machen. Manche Rezepte müssen eben aufwendig und besonders bleiben. So sehe ich das zumindest.
Bei diesen Macarons habe ich neben Mandelmehl, Puderzucker auch eine Prise Zimt und Kakaopulver dem Teiges hineingefüllt. So so lecker und komplett glutenfrei obendrein! 
Wer nun also am Wochenende einen freien Tag hat und seine Liebsten überraschen oder einfach sich selbst etwas gutes tuen möchte, der kann ja zu seinen Kichererbsenwasser greifen und daraus leckere Macarons fertigen.

Macarons mon amour! 
Ok, after 4 years of French in elementary school, I can not even say a sentence or just recite a few of the numbers. But what I know is this little French 'sin'. My sister was only a few years ago in Paris and then she came back home proudly with very (very) expensive Macarons. 
These are anything but ordinary. As the title suggests, they are completely vegan and not pitched with protein. The first attempts I made to try my little brother and he was totally excited. Afterwards I did tell him that they are made of chickpea water. "Whaaaat, that always stinks so disgusting," was his reaction. 
Yes, these macarons are made from chickpea water, much more known as Aquafaba. The liquid is boiled, which really does not smell pleasant. But it is well worth it, as you can whisk it up super fluffy.After several attempts, I got the idea in the evening to try it all out again. So, I went in the kitchen for about 9 p.m with the hand mixer for 20 minutes. My neighbors have to love me haha! 
What I learned from that is time is the key to very good macarons. Popping the aquafaba, mixing the ingredients and then splashing the circles onto a baking sheet may be done in less 30 minutes. What really takes a long time is to let the macarons dry. The longer the better-in my case the best result was indeed after 1.5 to 2 hours. So it's not one of those recipes that you can do quickly. Unfortunately not. But otherwise you would probably do it too often. Some recipes just have to be elaborate and special. That's how I see it. 
In addition to almond flour and icing sugar, I also poured a pinch of cinnamon and cocoa powder into the dough for these macarons. So delicious and completely gluten-free on top of that! 
So if you have a day off on the weekend and surprise your loved one or just want to do something good for yourself, you can grab his chickpea water and make delicious macarons.
