Mother's Day is just around the corner, only a few days left. For me, that means celebrating my mother's birthday at the same time. Because of this, there is a last minute gift idea and a tasty snack alternative.
We had at home after every lunch a small candy. Mostly Bounty's, as my mom loves coconut as much as I do.
If that's the case for you as well, you have to try this recipe.
The main ingredient is just, exactly: coconut!
I also only use 4 other ingredients. The taste is amazingly similar, I would say even better. Let's be honest, everything that is homemade, tastes much better!
You start with the coconut flakes, which are coarsely ground in a blender. You can of course mix it even finer, as it tastes better for you. Then comes the coconut oil, agave syrup, vanilla and as an absolute secret ingredient of the Vegan Creme Cheese of Simply V! At first glance this sounds really weird, but trust me it tastes a lot better like coconut milk or coconut cream. Then mix the whole 1 minutes until a nice solid mass is formed and voila. That was it! Shape the balls and place in the freezer until the chocolate has melted.
I think thats the easiest way for snacking!
For my mother, there are these and other small gifts on Sunday, best kept in the fridge and give in a glass.
